Preparation of Rose Patel's Preserve (Gulkand):

Gulkand is very easy to prepare delight, that can be made easily at home without much hassle. Only you need are some petals of roses and sugar. The rose petals are washed and then lightly dried, then petals and sugar are in layers in a clean glass jar with a lid. This jar is kept in the sun for at least six hours a day and is shaken lightly to maintain its composition. In a month, Gulkand is ready to eat when it becomes a thick, sweet concentrate. Some additional ingredients such as the silver leaf, cardamom seeds, Prayal Pishti (coral calcium), or Mukta Pishti (powder of pearl) can be placed in the Gulkand jar to enhance its cooling properties, often compared to rose jams and petal jams readily available in the market.  It tastes much superior not only for the variety of roses that is used but also for the method of preparation. Gulkand is baked in the sun for at least a month; thus giving a rich, dense, and floral flavor to the delicacy. Jams and marmalades, for their part, are made from standardized rose petals in sugar syrup. They are stirred continuously on a lit gas stove and are usually ready to eat within a few hours. This gives them a one-dimensional flavor, delightful the Gulkand. In addition, the nutrients of the rose blossoms are preserved in the Gulkand sun cooking method, which is not the case with a standard-produced rose jam.
